Proto Ginjo: A junmai ginjo nama chozo (single pasteurized), brewed slow and cold resulting in a light-bodied sake with notes of green melon and apple. This sake is fermented with a blend of yeasts and both calrose and yamada nishiki rice milled to more than 60%.

Omachi Junmai: Bone dry with subdued aromatics. This sake was brewed with the first omachi rice grown in the US by our friends at Isbell Farms and milled to 59% by Minnesota Rice & Milling. Omachi is the oldest known sake rice strain with no genetic cross-breeding and was discovered in 1859. It is said to create sakes that are layered, earthy and herbal.
