Often overlooked, sake kasu is the unfermented rice & koji remaining after a sake is pressed. Kasu is used across Japan to make spirits and baked goods. Miomio transformed our sake kasu into a delicate and delicious treat, sake kasu dacquoise.

The kasu dacquoise pairs perfectly with our Catskills Junmai Daiginjo.
